Glen’s Cooking Tip:  Do you want to pay for salt or flavor?
Always read the label on the product to see not only what’s in it but what you are paying for. If you are currently using recipes from South Louisiana cookbooks substitute
Glen’s Cajun Creole Season-All-No MSG, a Blend for all Seasons for the seasoning. Glen’s Cajun Creole Season-All-No MSG will enhance the flavor of anything that you put it on. Low Salt in the culinary world means that the ingredients have 140 mg of sodium or less per serving. Glen’s Cajun Creole Season-All-No MSG has 135 mg. or  6% per serving compared to other brands that have 12% to 13% of sodium per serving.  You get the flavor you’re looking for without lots of salt.


La Glen's Mango Rita Habanero Pie

INGREDIENTS

1 - 10 in. Graham Cracker Pie Crust (one with 2 extra servings)
1 - 14 oz. can Eagle Brand sweetened condensed milk
1 - 8 oz. container whipped topping - thawed
1 & 1/2 oz. lime juice
1 & 1/2 oz. Jose Cuervo Tequila
1/4 cup dried mango chopped or diced
1 & 1/2 oz. Tropical Mango Imitation Liqueur
1 - 14.8 oz. bottle of Glen's Heads & Tails Mango Habanero Sauce
1/3 cup dry roasted Macadamia nuts with sea salt


DIRECTIONS

In a small bowl, combine the 1/4 cup chopped or diced dried mango with the 1 & 1/2 oz. tequila.  Allow the mangos to plump up to your satisfaction before using in recipe.  Combine milk with whipped topping.  One at a time, fold in the lime juice, tequila and mangos, and then the Mango Liqueur.  Lastly, fold in Glen's Mango Habanero Sauce.  Spoon the mixture into the pie crust.  Place the Macadamia nuts in a Ziploc bag and crush them.  Sprinkle them on top of the pie.  Freeze the pie, and then serve.


La Glen's Spicy Boudin Balls

INGREDIENTS

2 lbs. of boudin
bread crumbs seasoned with Glen's Cajun Creole Season-All-No MSG
2 eggs, beaten
oil for frying


DIRECTIONS

Remove boudin from casing; shape mixture into balls about the size of a walnut.
Dip in eggs and then into seasoned bread crumbs. Coat the balls thoroughly with
the bread crumbs; shake off all excess. Refrigerate 1 hour. Deep fat fry at 375
degrees Fahrenheit until golden brown. Don’t crowd the pan; drain on paper towels.
Add more of Glen’s Cajun Creole Season-All-No MSG to taste. To enhance the
flavor, dip in Glen’s Heads & Tails Cocktail Sauce,  Glen’s Heads & Tails
Bar-B-Que Sauce or Glen’s Heads & Tails Mango Habanero Sauce.

Yield: About 4 dozen.
 


La Glen's Crawfish Corn Soup

INGREDIENTS

1 stick of unsalted butter
1 medium onion - chopped fine
2 ribs of celery - chopped fine
1 16 oz. package of crawfish - coarsely chopped
2 10 oz. cans of cream of potato soup
1 15 oz. can of cream style corn
1 pint of half & half
Glen’s Cajun Creole Season-All-No MSG-to taste
2 tablespoons granulated sugar or to your taste


DIRECTIONS

Melt the butter in a skillet over medium heat. Saute' the onion and celery in the
butter for 5 to 10 minutes or until translucent.  Stir in the crawfish and cook for
5 minutes longer. Add cream of potato soup, cream style corn and half & half.
Stir mixture and heat for at least 5 more minutes until well heated.
Add granulated sugar to taste. Stir mixture until sugar is well dissolved.
Remove skillet off heat and season to taste with Glen’s Cajun Creole Season-All
No MSG
.  This recipe doubles easily.

Yield: Servings depending on size of bowl - 6 to 8
 


La Glen's Beer Batter

INGREDIENTS

3/4 cup cornstarch
1/4 cup flour
1 teaspoon baking powder
3/4 teaspoon
Glen’s Cajun Creole Season-All-No MSG
1/3 to 1/2 of can of (12 oz.) beer
1 egg (large) beaten


DIRECTIONS

Combine all ingredients in bowl. Mix well. Can be used as light frying batter for
chicken strips, onion rings, fish, jalapenos and other vegetables.


La Glen's Heads & Tails Tomato Juice

INGREDIENTS

46oz. can tomato juice
6 oz. can orange juice-undiluted
1 tablespoon Worcestershire Sauce
2 teaspoon Glen’s Cajun Creole Season-All-No MSG
                 or Glen’s Texjun BBQ Sprinkle-No MSG


DIRECTIONS

Blend and refrigerate. Serve in frosted glasses. Can also be used as a Bloody Mary Mix.
 


La Glen's Texjun Potato

INGREDIENTS

1 baking potato about the length of your hand
2 slices of thick bacon or hog jowl
Glen’s Cajun Creole Season-All-No MSG- to taste
Glen’s Texjun BBQ Sprinkle-No MSG- to taste

DIRECTIONS

Slice your potato lengthwise in 3 equal parts from end to end.  Sprinkle the exposed part of the potato that you have sliced with either Glen’s Cajun Creole Season-All-No MSG or  Glen’s Texjun BBQ Sprinkle-No MSG or both to taste. Place your bacon slices or hog jowl on the seasoned exposed areas.  Wrap tightly in aluminum foil. Bake in 400 degree oven until potato is done.


La Glen's Fish Fry Meal Mix

INGREDIENTS

12 cups yellow corn meal (5 lb. bag)
6 cups corn flour
3/4 cup
Glen’s Cajun Creole Season-All-No MSG

DIRECTIONS

Mix all the ingredients in an airtight container. Store in the refrigerator or freezer until needed.


La Glen's Catfish Fry

INGREDIENTS

La Glen’s Fish Fry Meal Mix
3 to 5 oz. catfish filets - fresh or completely thawed
Peanut Oil or your favorite cooking oil
Glen’s Cajun Creole Season-All-No MSG


DIRECTIONS

Pour cooking oil into a container to deep fry your catfish and slowly bring your
cooking oil up to 375 degrees Fahrenheit while you are preparing your filets.
Leave the filets whole or cut into 2 pieces. Sprinkle with Glen’s Cajun Creole
Season-All-No MSG
to taste. Cover your filet with La Glen’s Fish Fry Meal Mix.
Shake off any excess mix. When your oil temperature gets to 375 degrees
Fahrenheit, place seasoned filets one at a time in the heated oil.
Do not overcrowd. Cook 2 to 3 minutes until fish start to float. Check for doneness. Place on paper towel, but do not put into paper sack because it causes too much moisture. Check the flavor of your cooked fish and you may want to add more
Glen’s Cajun Creole Season-All-No MSG.

For Variation:  Take your fried catfish and put in shallow cardboard box
approximately 2 inches height with the bottom covered with paper towels.
Place on your BBQ Pit with indirect heat and smoke. Choice of wood flavor
is yours. Smoke your fried catfish for 10 to 15 minutes maximum.

Remember after you fry your fish, fry your French Fries and hush puppies
and sprinkle with
Glen’s Cajun Creole Season-All-No MSG.
