GLEN’S POULTRY BRINE MIX
is a dry mix which is added to 1 quart of water. Pour
the mixture into 2 pint jars. Put 1 pint jar in the
refrigerator for later use and from the other pint jar
pour out the amount of mixture that you need. Should
you accidentally stick your injection needle in the
pint mixture, you won’t contaminate your whole quart.
You can inject about 12-14 chickens with one quart of
Glen’s Poultry Brine Mix. Use about 2 or more fluid
ounces per chicken. Inject the meat on each side of
the breastbone, the thigh and leg meat with an
injection syringe. A brining mix guarantees more even
cooking and cuts down on cooking time since the brine
water conducts heat. Sprinkle the chicken with Glen’s
Cajun Creole Season-All or Glen’s Texjun BBQ Sprinkle
or a combination of both. Place in refrigerator
overnight. Cook in oven or in BBQ pit until the
internal temperature in the breast area reaches 165
degrees Fahrenheit. Take the chicken
and place in airtight container ; set it on countertop
and let it rest for 30 minutes.
